I've been craving a big bowl of my favourite ramen from Wagamamas lately but with a week until payday (sob) I decided to try and make my own. Authentic ramen recipes contain a lot of ingredients, so much so that it's probably a bit cheeky to call this a ramen, but it satisfied my cravings and has quickly become my favourite quick-cook dinner. You can throw it together in 10 minutes using any vegetables in your fridge, along with a few bits from the cupboard.
Ingredients
1 nest of egg noodles per person
Splash of soy sauce
1 vegetable stock cube
Handful of beansprouts
A few chopped spring onions
Three mushrooms
Some chopped up babycorn
Hanful of sugar snap peas
Some slices of courgette
As much red Chili as you can handle
A clove of garlic
The vegetables you use in this are completely your own choice, you can also add in chicken or other types of meat if you like! It's basically a good way to use up anything in the kitchen.
001. Chop up all of your vegetables. It's entirely up to yourself how much of each you use and what you choose to put in your ramen - I'm sure most veg would taste great!.
002. Put your egg noodles into a pot of boiling water, these only take 5 minutes to cook!
003. Whilst the noodles are cooking put all of your chopped vegetables into a pan with a drop of oil and cook them for 3-5 minutes. Make up your broth as they cook, which is as simple as making a vegetable stock (I used 1 oxo cube with 200ml of water for my bowl-sized serving) and add soy sauce until you're happy with the taste.
004. Place your cooked noodles into the bowl, cover with broth and top with your vegetables.

I don't think I've ever ordered ramen at a restaurant, but this recipe is one I'd try at home because it's not too intimidating. Great photos!
