Starting work at 7.45am and making sure I eat a healthy breakfast certainly isn't easily. I have a brilliant restauant at work, but their veggie breakfast option of hashbrowns on a roll smothered in tomato sauce (mmmm, I can taste it now) wasn't good for my waistline so when I spotted these beauties on Pinterest and saw the ingredients list - JUST THREE INGREDIENTS, YES! REALLY! - I knew I had to try them.
They have the crunch of a cookie, whilst being soft and chewy inside and are the perfect 'grab and go' breakfast. I've been eating these at my desk with a piece of fruit every morning and they keep me feeling full until lunch. It's also incredibly difficult not to snack on these throughout the day as they're just so good, especially straight out of the oven!
Ingredients (for approx 10 pieces)
2 x Bananas
1 cup of oats
Handful of trail mix
Yep, that's really all you need! And making these couldn't be easier either.
001. Mash your bananas and oats together in a bowl using a fork until they are fully combined.
002. Mix in the trail mix and use your hands to mould the mix into cookie sized pieces.
003. Put them on a tray and pop them in the oven for 10-12 minutes at 180C.
And there you have it, a super easy breakfast idea!
You can substitute the trail mix for whatever dried fruit or nuts you like, even adding some chocolate chips if you've got a sweet tooth! I've seen other recipes which add sugar or cinnamon, but these are just the right amount of sweetness to feel like a treat whilst being both healthy and filling.

ReplyDeleteI'm a huge fan of greek yoghurt - my favourite breakfast at the moment is greek yoghurt, honey and blueberries. And it's great with a handful of granola to give a bit of crunch! Mmm you should try it :) xx
I think I love you for posting this. I cycle to work, and although I have a partial breakfast before I go, I like to have another half breakfast when I get there or I'm starving well before lunch, but am also trying to eat sugar free. This is amazing, can't wait to give it a try! THANK YOU!

These sound great - I used to eat a lot of cereal bars when I was in a rush but they're full of rubbish, definitely going to give these a go! x
