



Almost a year ago, completely by accident, I created what I now refer to as 'the best brownies... ever', that was until I came across some Toffee Crisps in my fridge and created these last week. Everyone at work loves my brownies, so I thought it would be fitting to bring in a huge batch of them for my team before I left them to join my new team. The only problem was, I didn't have many chocolate chips, but I did have some Toffee Crisps in the fridge.
I've made the brownies countless times before, so I knew they'd turn out perfect. However, I had no idea how adding some chopped up Toffee Crisps to the mix would work. In my mind I imagined the toffee melting slightly and becoming chewy, but slightly gooey, whilst the rest of the chocolate bar remained crispy. And do you know what? It worked. It was PERFECT. Moist chocolate brownies, chewy but gooey toffee and a nice surprise crunch in places. If you like brownies, you need to try these!
INGREDIENTS:
makes 12 brownies
1/2 cup of butter
1 cup of caster sugar
2 large eggs
1 cup of cocoa powder
1 teaspoon of salt
1 teaspoon of baking powder
1 tablespoon of vanilla extract
1 cup of flour
3 bars of Toffee Crisp
Handful of chocolate chips
DIRECTIONS:
001. Preheat the oven to 350°F/180°C/gas mark 3. Lightly grease some greaseproof paper or tin foil and line your tray.
002. Put the butter into a pot and melt it on a low heat. Once melted, remove from the heat and mix in the sugar until well combined. Put the mixture back onto the heat for a few minutes (don't let it bubble) until it has as glossy shine. This will melt the sugar a little and create a shiny top crust on your brownies.
003. Pour the mixture into a mixing bowl and mix in the cocoa, vanilla and salt. Beat both eggs in until smooth, then beat in the flour and add your chocolate chips. Chop up the Toffee Crisp bars and mix these in.
004. Dip a spoon into the bowl and taste how nice and chocolatey it is, mmmm. If you're dieting, like me, have a little cry about the fact that you can't eat them all to yourself. Now, spoon it into your tray and spread the mixture out evenly.
005. Bake the brownies for around 25-30 minutes, but keep an eye on them. You'll know they're ready when a knife inserted into the centre of the brownie comes out almost dry but with a little bit of gooeyness. Remove them from the oven and they will firm up a litte.
006. After 5 minutes use a knife to loosen the edges - this will stop them sinking in the middle. You can either eat them warm or let them cool completely. They're great re-heated in the microwave for a few seconds too.

Hmm yum. I love brownies but I never really experiment with them, I bet you could add any 3 chocolate bars to them to get delicious results. Mars bars and snickers would also be delish!
