INGREDIENTS:
makes 12 cheesecakes
2 packets of Oreos (12 for the cupcakes, 6 for crushing over the top)
250g of cream cheese
65g of granulated sugar
110g of peanut butter (I added more!)
1 large egg
1 teaspoon of vanilla extract
DIRECTIONS:
1. Preheat your oven to 350 degrees F. Fill a tray with 12 paper cases (I used muffin ones - you'll probably need more if you use the smaller style) and place an Oreo in the bottom of each.
2. Beat the cream cheese and sugar together until light and fluffy, probably around 3 minutes. Add in the peanut butter (make sure you lick the spoon, mmm) and beat until combined. Add in the egg and vanilla, and again beat until everything is combined.
3. Place a dollop of the cream cheese mixture on top of each Oreo. It doesn't matter how neat they are. Crush the 6 Oreos that you set aside and sprinkle them over each cheesecake, pressing it down into the mixture to make sure that they stick.
4. Bake for 20-25 minutes, until the edges are just barely turning golden. Allow to cool completely before eating. Mmmmm....
