No, your eyes aren't playing tricks on you. I did make cupcakes, and they are in ice cream cones. HOW CUTE?! I decided to make them as a surprise for my colleagues after seeing Katy's post on them and with a spare couple of hours I set to work tonight!
I can't emphasise enough how easy these are to make, and they don't take any longer than normal cupcakes either. Simply make a basic cupcake batter, spoon into cones (or paper cases if you prefer!), bake, decorate with buttercream, lots of sprinkles and stick a flake in the top. I think they look so impressive! I made a mixture of vanilla and chocolate cupcakes - some with cones and some with paper cases.

Instructions are adapted as I don't own a mixer
Makes 6
INGREDIENTS:
120g plain flour
140g caster sugar
1 1/2 tsp baking powder
a pinch of salt
40g unsalted butter, at room temperature
120ml whole milk
1 egg
1/4 tsp vanilla extract
DIRECTIONS:
001. Preheat the oven to 170°C (325°F) Gas 3.
002. Cream the butter and sugar together in a bowl until light and fluffy.
003. Whisk in the egg and vanilla extract and then whisk in your milk too.
004. Gently fold in the baking powder and sifted flour, adding 20g of cocoa powder at this stage if you want chocolate cupcakes.
005. Fill 3/4 of the cones (and 1/2 of the paper cases if you're using them instead) with mixture and cook for roughly 20 minutes. Test they're ready by inserting a skewer in the centre and it should come out clean.
006. Leave the cupcakes to cool before decorating with buttercream (I used my Wilton 1M nozzle and cheated by buying pre-made icing! shhh, don't tell!). Add sprinkles, a flake and there you have it - ice cream cupcakes!
I'd love to know if you try these! I'll definitely be making them again and my mind is full of ideas on different combinations. Adding some kind of sauce or jam into the cone with the batter would be fun!

I think you may have your quantities wrong in this recipe, there doesnt seem to be enough butter??
ReplyDeleteIt definitely is the correct amount, 40g. I know it's a lot less than other recipes but it does work and makes an amazing cake! Maybe something to do with their being milk in it too, I'm not sure.

Oh what a great idea! These would be perfect for taking in to work for my colleagues, I always find normal cupcakes get a bit squished and these look a bit more robust.
